Healthy Goji Berry Cake !

This year, I decided to make a healthy goji berry cake for my birthday. If you love goji berry, this cake will become one of your favorite. Orange juice gives a tangy flavour and the goji berries add a flash of colour.

Ingredients:

  • 2 Cups Whole Grain Wheat Flour
  • 2 Tsp Baking Powder
  • 50 g Brown Sugar
  • 3/4 C Vegetable Oil
  • 2 Eggs
  • 1/3 C Goji Berry
  • 1 C Orange juice
  • 1 Tsp Orange Zest
  • Preparation:

    • Mix the oil and sugar together. Add eggs and mix until smooth.
    • Add half the flour mix (flour and baking powder) to the wet mix. Add the goji berries along with the orange juice. I usually use fresh goji berries. Stir untill well mixed and add remaining flour.
    • Bake at 180 °C for 35 to 40 minutes.
